Spicy Beef Skewers

I personally enjoy cooking a fair amount. Nothing hits the spot quite like a nicely cooked meal to help alleviate the stresses of the college lifestyle. Naturally, if one eats a lot of crappy food then they will start to feel crappy so I make sure to cook myself a number of good meals each week. I enjoy cooking a lot of different meats but am a little limited so I don’t have a grill. I really wish I had a big grill to cook steaks and grill fish on but I guess I’ll just have to wait until I get a house of my own. Even though I don’t have a grill, I’ve been able to do a lot with the broil setting on our oven in order to get some nicely “grilled” meat.

Last night, I decided to make some Spicy Beef Skewers. It was a pretty simple recipe and it yielded some greaty results!

I first mixed up a marinade that consisted of some Terayaki sauce, soy sauce, olive oil, a little vegetable oil and some crushed red peppers. I marinated some chunks of beef in the sauce for about 15 minutes while I cut up a nice onion. I kind of wish I liked more vegetables like red and green peppers since those would have been a nice addition to the receipe. Anyways, I then poked the meet and onions on to some bamboo skewers and put them on a rack to broil. It only took about 10 or 15 minutes to cook them thoroughly and get them to the point where they looked nicely crisped.

Pretty simple receipe that went nicely with some hot white rice! They definitely had a nice tang to them and I made enough to last for two meals so I’m pretty content. :) And to think that everyone talks about eating bad in college. Not me!
